Spaghetti with Bacon and Onion


Serves: 6

Ingredients

2 tablespoons olive oil
1/2 cup unsmoked lean bacon cut into matchsticks
1 small onion finely chopped
1 pound tomato fresh or canned chopped
1/4 teaspoon thyme leaves
salt and pepper to taste
1 1/4 pounds spaghetti
freshly grated Parmesan cheese

Directions:

In a medium frying pan, heat the oil. Add the bacon and onion and cook over low heat until the onion is golden and the bacon is beginning to brown. Add the tomatoes, thyme, salt and pepper. Cover, and cook over medium heat for 10 to 15 minutes. Bring a large pan of salted water to boil. Cook the pasta until al dente. Drain, toss with the sauce, and serve with the grated Parmesan.
