Italian Cream Cake

Ingredients

1/2 cup butter
1 cup shortening
2 cups sugar
2 teaspoons vanilla extract
1 cup buttermilk
1 teaspoon baking soda
1 pinch salt
5 eggs yolks
5 egg whites
1 cup chopped nuts
2 cups flour
1 cup coconut
FROSTING:
1 (8-ounce) package cream cheese
1 teaspoon vanilla extract
1 box powdered sugar
1/2 cup nuts or coconut optional

Directions:

Preheat oven to 350. Cream together butter, shortening and sugar. Add vanilla, buttermilk, baking soda, salt and egg yolks. Beat 5 egg whites until stiff then gently fold into batter. Grease and flour a 9x13 pan. Pour in mix and bake for 30 min. until done. Frost when cooled.
