Apple Strudel

Ingredients

FILLING:
1 pound apple
1 tablespoon sugar
1/8 teaspoon cinnamon
1 cup non-alcoholic sparkling white grape juice
grated zest of 1 lemon
PASTRY:
2 cups flour
1 egg separated
3 tablespoons water
8 tablespoons softened butter cut into small pieces
1/8 teaspoon salt
2 tablespoons melted butter
powdered sugar

Directions:

Preheat oven to 350.
Prepare Filling: Peel, core and slice apples. In medium saucepan, heat together: apples, sugar, cinnamon, grape juice, and lemon zest. Boil until apples become very soft, almost like a sauce. Set aside and cool.
Prepare Pastry: Place flour on a smooth surface and form a well in the center. Place egg white, salt and softened butter into the middle of the well. Draw some flour from inner rim of well over egg and butter mix, beating constantly and forming a smooth, elastic dough. Shape into a ball and set aside. Spread a tea towel over work area, dust it lightly with flour and place the pastry on top. Roll it out as thinly as possible, almost transparent. Brush it with melted butter and spread filling on top. Carefully roll up the strudel by lifting tea towel. Transfer to a greased baking sheet. Brush with melted butter and bake until golden brown. Lightly sprinkle with powdered sugar and serve warm.
