Chicken & Linguini Casserole

Ingredients

8 ounces linguini
2 tablespoons butter
3/4 cup celery (diced)
3/4 cup bell pepper (diced)
1/2 cup onion (chopped)
1 cup fresh mushrooms (sliced)
1/2 cup carrot (shredded)
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
1/2 teaspoon basil
1/4 teaspoon pepper
1 1/2 cups chicken broth
3/4 cup sour cream
3 cups chicken (cooked and diced)
1 1/2 cups Cheddar cheese (shredded)
1/2 cup bread crumbs (dry)

Directions:

Cook linguini according to package directions. Drain and set aside.

In large pot melt butter. Add celery, bell pepper, onion, mushroom and carrots. Cook over medium heat for 5 - 6 minutes, stirring frequently until tender. Then add chicken broth, sour cream, garlic powder, salt, basil and pepper. Mix well. Add cooked and diced chicken. Mix lightly. Add the cooked and drained linguini and 1 cup shredded Cheddar cheese. Mix until well-blended.

Grease a 9 x 13 inch pan. Spoon mixture into pan, top with remaining 1/2 cup Cheddar cheese, and sprinkle with bread crumbs.

Bake at 350 degree oven for 35 minutes. Let stand before serving, about 10 minutes.
