Miso Soup With Soba And Bean Curd

Ingredients

1 (32-ounce) container vegetable broth
4 cups water
1 (8-ounce) package soba noodles (buckwheat), broken in half
2 (0.3-ounce) packages dried miso soup mix
1/2 cup finely diced tomato, fresh or canned
1 pound firm tofu, cut into 1/2-inch cubes
4 scallion, trimmed and thinly sliced

Directions:

Heat the broth and water to boiling in a large saucepan. Add the soba noodles and cook until tender, about 5 minutes. Stir in the miso mix, tomato, tofu, and scallions, heat through, and serve.
