Curried Spinach Soup


Serves: 6
Total Calories: 119

Ingredients

2 (7-ounce) bags spinach, coarsely chopped
2 cups Curry Simmer Sauce or 1 (16-oz) jar curry cooking (or simmer) sauce
1 (32-ounce) container vegetable broth
1 (16-ounce) package prepared mashed potato, refrigerated or frozen and thawed.
dash grated nutmeg
ground black pepper, to taste (you probably won't need more salt)

Directions:

Combine the spinach, curry sauce, and broth in a large saucepan. Add the potatoes, nutmeg, and pepper, and bring to a simmer, stirring often. Serve hot.
