Almond Apricot Delights

Ingredients

1 1/2 cups dried apricots, coarsely chopped
2 tablespoons cognac
1/2 cup almond paste
1/2 cup powdered sugar
2 teaspoons instant coffee
2 teaspoons cocoa
1/4 cup powdered sugar
1 teaspoon cocoa

Directions:

Combine the first 6 ingredients in food processor or blender, and purée. Combine powdered sugar and 1 teaspoon cocoa. Roll apricot mixture into marble-size balls and shake in the powdered sugar mixture. Store in an airtight container with the leftover powdered sugar mixture to prevent them from sticking. Best kept in the freezer.

Note:
A quick way to roll out the balls is to do it assembly-line-fashion a dozen at a time. Scoop out about a dozen little spoonfuls on waxed paper, roll them one after the other, drop them into the bag and shake them all together.
