Vegetable Loaf

Ingredients

5 tablespoons butter (a little bacon grease is good)
3 tablespoons flour
1 small onion, chopped
2 cups milk or vegetable water
1 teaspoon salt
1 teaspoon pepper
1 cup grated Cheddar cheese
2 eggs, beaten
2 cups cooked sliced string beans
2 cups cooked sliced carrots
2 cups cooked sliced potatoes
1 cup bread crumbs

Directions:

Melt butter in pan. add flour, onion, milk, and seasonings. Cook until thick, then add cheese. Remove from heat; add a little to the eggs, then add eggs to sauce. Arrange beans, carrots, and potatoes in layers in greased pan. Pour white sauce over and put buttered crumbs on top. Bake at 350° for 30 minutes.
