Crockpot Apple Cake

Ingredients

2 cups sugar
1 cup oil
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon salt (or less)
1 teaspoon baking soda
1 teaspoon nutmeg
2 cups finely chopped, unpeeled Delicious apples
1 cup chopped walnuts

Directions:

Beat sugar, oil, and eggs together well; add vanilla. Sift flour, salt, soda, and nutmeg together. Add apples to sugar mixture; mix well. Stir in flour mixture and nuts; mix well. Pour batter into greased and floured 2-pound can. Fill can no more than 2/3 full. Place in crockpot; cover top of can with 4–6 paper towels. Cover and cook on HIGH about 3 1/2 hours. Crockpot lid should not be tightly closed—slightly raise lid to allow release of excess moisture. Add no water and do not peek until last hour.
