New England Fish Chowder


Serves: 4

Ingredients

2 tablespoons polyunsaturated oil
1/2 cup chopped onion
1/2 pound halibut steak or other chowder fish, cubed
1 cup diced potato
3 cups bottled clam juice
1/4 teaspoon white pepper
2 cups hot non fat milk
1 tablespoon minced parsley

Directions:

Saute the onions in the oil until soft and translucent. Add the fish and cook for 1 minute. Add the clam juice, potatoes and pepper and cook slowly over low heat for 20 minutes. Stir in the milk and parsley and simmer gently (do not let the chowder boil).

Serve with crackers.
