Easy Tin Foil Dinners

Ingredients

6 to 8 medium red potatoes, cut into bite sized pieces
1 medium red onion, cut into 12 wedges
2 teaspoons Italian seasoning
1 teaspoon salt
1 tablespoon olive oil
4 (1/4 pound each) frozen lean ground beef patties

Directions:

Heat gas, charcoal or electric grill.

Cut four 18 x 12-inch sheets of aluminum foil. Spray shiny side with nonstick cooking spray. In a microwave-safe bowl, toss potatoes, onion, Italian seasoning, salt, and oil together. Microwave on high for 3–4 minutes to partially cook vegetables.

Place a beef patty in the center of each aluminum sheet. Divide potatoes and onion mixture evenly over the patties. Fold the aluminum foil in half over the meat and vegetable mixture. Fold the edges twice, leaving extra room for heat expansion. Place the dinners over the hot grill. Cover and cook 20–25 minutes over medium heat, or until patties reach 165 degrees internally, and potatoes are tender.
