Peanut Sauce

Ingredients

1 1/2 cups water
1/2 cup onion, finely chopped
2 cloves garlic, minced
1 tomato, large, fresh, ripe, finely chopped, with juices
1/2 to 2 Guinea peppers or scotch bonnet chiles, seeded and minced (for a hotter sauce, leave the seeds in)
2 teaspoons ginger, minced fresh
1 bay leaf
1 ounce shrimp, dried (3 to 4 tablespoons), coarsely chpoped, or 4 ounces fresh shrimp, shelled and deveined, then coarsely chopped
1/2 cup chunky peanut butter
3 to 4 tablespoons cilantro, minced fresh (optional)
salt and freshly ground black pepper, to taste

Directions:

1. Combine the water, onion, garlic, tomato, Guinea pepper, ginger, bay leaf, and shrimp in a saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer gently until the shrimp are soft, about 5 minutes.

2. Remove from the heat and discard the bay leaf, then whisk in the peanut butter, cilantro (if using), and salt and pepper. Return to low heat and continue simmering until the sauce is thick and richly flavored, about 5 minutes. Transfer to a small bowl, cover, and refrigerate until ready to serve.
