Chicken Parmesan

Ingredients

6 chicken breasts
2 tablespoons oils
1 cup shredded mozzarella cheese
2 (8-ounce) cans tomato sauce
1 (14-ounce) can stewed tomatoes
1/2 onion, chopped
1/2 teaspoon garlic salt, or less
1/2 teaspoon onion powder, or less
1/2 teaspoon Italian seasoning, or less
1 to 2 dash cumin
1 cup shredded mozzarella cheese and parmesan cheese
1 (16-ounce) package gluten free noodles

Directions:

Prepare noodles according to directions.

In a medium saucepan set over medium high heat sauté onion in 1 tablespoon of oil. Add tomato sauce, tomatoes, and seasonings. Allow the sauce to simmer and reduce while preparing chicken.

In a large skillet, heat oil over high heat. Brown remaining chicken on both sides, about 5 minutes each side. Once cooked through, add the tomato sauce, stewed tomatoes, onions, and seasonings (adjust seasonings to taste).

Simmer chicken in the sauce for about 15 minutes. Just before serving, sprinkle the mozzarella and parmesan cheese on top of the chicken. Cover and let melt. (If your skillet is oven-proof, you can set it under the broiler to brown and melt.)

Serve over gluten free noodles.
