Tahini-Carrot Spread

Serves: 5
Total Calories: 10
Yield: 1 Cup

1/2 cup sesame tahini
2 tablespoons water
1 tablespoon balsamic vinegar
1 tablespoon tamari sauce
1 cup finely grated* carrot
1/4 cup nutritional yeast flakes (optional)*
3 cloves garlic pressed, or to taste

1. In a medium-size bowl, combine the tahini, water, vinegar, and tamari; mix with a fork until thick and creamy.

2. Add the remaining ingredients and mix again. If the spread is too dry, add another tablespoon of water. Serve as a spread in sandwiches or on crackers.

*The carrot needs to be grated by hand. A food processor will not grate it finely enough. Most four-sided hand graters have grating surfaces in two sizes. It may take a minute longer, but using the fine side will make this spread come out best.

**Nutritional yeast gives this spread a much richer taste.
