Berry Good Morning Cake

Ingredients

1 cup flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter or margarine
1 beaten egg
1/3 cup milk
1/2 cup frozen strawberries, thawed
1/4 cup orange marmalade
1/4 cup sugar
3 tablespoons flour
1/4 cup butter or margarine

Directions:

Combine flour, sugar, baking powder and salt. Cut in 1/4 cup butter until crumbly. Mix egg and milk add to dry ingredients. Stir just until moistened. Spread into a greased 8 x 8-inch baking pan. Blend undrained berries with marmalade. Spoon over batter.

Mix 1/4 cup sugar and 3 tablespoons flour cut in 1/4 cup butter until crumbly. Sprinkle over cake. Bake at 400° F. for 30-35 minutes. Cool 10 minutes. Remove from pan. Cool thoroughly. Wrap in foil, label, and freeze.

To serve, heat frozen cake in foil at 350° F. for 30-35 minutes or until warmed through. Open foil last 10 minutes of heating.
