Pigs in a Cheese Trough

Ingredients

2 eggs
1 tablespoon milk
1 1/3 cups dry bread crumbs
1/2 cup grated Parmesan cheese
1 tablespoon dried parsley flakes
1 1/2 pounds boneless cooked ham, cut into 3/4-inch cubes
1 oil for frying

CHEESE SAUCE:
5 ounces Velveeta cheese, cubed
1/4 cup milk
1/2 cup salsa

Directions:

Whisk eggs and milk in a shallow bowl. In another bowl, mix bread crumbs, Parmesan, and parsley. Dip ham cubes in egg mixture, then roll in crumb mixture. In a large skillet, heat 1?4 inch of oil to 375°. Fry ham cubes, a few at a time, about 2 minutes on each side or till golden brown. Drain on paper towels.

Cheese Sauce:
Heat cheese and milk over medium heat until cheese is melted. Remove from heat; stir in salsa. Serve with ham cubes.

Fun Fact: Your supermarket has packaged ham cubes to make life easier when preparing dishes calling for them. Also easy to cut from a ham slice. Consider freezing ham cubes from a holiday ham. Some recipes may be able to utilize sliced deli ham. Handy to have.
