Lazy Days Lemon Cake

Ingredients

1 (1-pound) frozen pound cake, thawed
2/3 cup jarred lemon curd, or canned lemon pie filling, divided
2/3 cup seedless blueberry jam, divided
1 (8-ounce tub) frozen whipped topping, thawed

Directions:

Carefully slice cake into 5 horizontal layers. Spread lemon curd on first layer, blueberry jam on second, lemon on third, blueberry on fourth. Frost with whipped topping.

Editor's Extra: Fun to decorate with lemon slices and real blueberries and mint leaves. May sub any white frosting for Cool Whip. Blackberry jam is good as a sub, but be sure it’s seedless. Use more or less jam, curd, or topping, as desired.

Fun Fact: Need some fresh lemon juice? Twist a fork in the cut half of a lemon, lime, or orange to get a small amount . . . squeeze for more.
