Kicky Layered Dip

Ingredients

3 cups shredded lettuce
1 (15-ounce) can black beans, rinsed, drained
3/4 cup chopped red and/or yellow sweet pepper
2 (8-ounce) cartons sour cream
1 fresh jalapeño pepper, seeded, chopped
1 (16-ounce) jar chunky salsa, drained
1 medium avocado, seeded, peeled, coarsely chopped
2/3 cup shredded Cheddar cheese
1/3 cup sliced pitted ripe olives

Directions:

On platter or shallow dish, layer lettuce, beans, sweet pepper, sour cream, jalapeño pepper, and salsa. If desired, cover and chill for up to 6 hours. Before serving, sprinkle with avocado, cheese, and olives. Serve with tortilla chips or tostadas.

Fun Fact: Serve salsas and dips in interesting vessels such as hollowed-out cabbage, bread, or pumpkins, pineapple, pepper, or melon halves.
