Preheat oven to 400°. Separate each biscuit into 3 layers. Arrange 15 rounds on each of 2 ungreased baking sheets. Sprinkle all with cornmeal. Bake 8–10 minutes until golden brown. Remove and place on wire rack. Cool completely. Spread each round with 1 1/2 teaspoons spinach dip. Sprinkle each evenly with bell pepper, carrots, and onions. Cover and refrigerate at least an hour.
Fun Fact: When a recipe becomes a make-again favorite, tape a copy of it to the inside of a cabinet door near your work area. Nobody can see it when the cabinet is closed, but it’s really handy when you need it.
