Caviar Party Potatoes

Yield: 60 potatoes

Ingredients

60 new potatoes, unpeeled, boiled until tender
1 oil for deep frying
1 (8-ounce) carton sour cream
1 (2-ounce) jar caviar, rinsed, drained

Directions:

Slice off bottom of each potato and hollow out a “bowl” in other end with a melon baller or small spoon. (Use centers of potatoes for something else.) Heat oil in deep fryer to 375°. Carefully drop potato "bowls" into hot oil and fry until crisp; drain on paper towels. Fill warm potatoes with sour cream, then top with a little caviar. Serve immediately.

Editor's Extra: Sub diced, cooked, seasoned shrimp for caviar if you like, but you’ll have to call it something else.
