Preheat oven to 400°. Spread coconut on large baking sheet. Bake 5 minutes till lightly browned, stirring every 2 minutes. Process coconut in food processor until finely chopped (not pasty). Beat egg with oil and red pepper flakes in small bowl; add chicken bites; toss to coat; roll in coconut; arrange on foil-lined baking sheet. Bake 16–18 minutes till no longer pink in center. Serve with spicy mango salsa.
