Amigos Bean Dip

3 cups shredded Colby Jack cheese, divided
1 (16-ounce) can refried beans
1 (10-ounce) can Ro-Tel tomatoes
1 (8-ounce) package cream cheese, cubed small
1/2 cup sour cream
1 tablespoon taco seasoning


In a large bowl, combine 2 cups cheese, beans, tomatoes, cream cheese, sour cream, and taco seasoning. Pour into a 2-quart baking dish; sprinkle with remaining 1 cup cheese.

Bake, uncovered, at 350° for 20–25 minutes or until edges are bubbly. Serve warm with tortilla chips, scoops, or vegetables.

Editor's Extra: This can be made with reduced-fat ingredients with little loss of great taste.
