Quick Gumbo

Ingredients

1 pound cajun-flavored link sausage
2 tablespoons oil
2 tablespoons flour
7 cups water
1 box Zatarain’s gumbo mix
1 cup sliced okra
1 (10-ounce) package frozen peeled, deveined shrimp, thawed
1/2-1 teaspoon Cajun seasoning (optional)

Directions:

Slice or cube sausage and cook in dutch oven or large skillet till lightly browned. In a cast-iron skillet over medium-high heat, add oil and flour. Brown, stirring constantly, till desired darkness. Add water, gumbo mix, and okra; stir till thoroughly mixed. Bring to a boil; turn down heat and cook 25–30 minutes; stir occasionally to keep from sticking. Stir in shrimp the last 10 minutes of cooking. May add Cajun seasoning, if desired.

Although gumbo mix has rice in it, you may want to serve the finished product over additional rice.
