Milano Chicken Pitas

Ingredients

2 tablespoons olive oil
1/2 medium onion, sliced
1 cup julienned carrots
1 cup chopped fresh broccoli
1 cup cubed cooked chicken
1 (7-ounce) jar roasted sweet red peppers, drained, chopped
1/4 cup chicken broth
1 teaspoon Italian seasoning
4 (6-inch) pita breads, halved
1/2 cup shredded Cheddar cheese
1/4 cup shredded mozzarella cheese

Directions:

In oil in a large skillet, sauté onion, carrots, and broccoli 4–5 minutes till tender. Stir in chicken, red peppers, broth, and seasoning. Bring to a boil; reduce heat; simmer, uncovered 5–6 minutes till heated through. Spoon into pita bread halves; sprinkle with cheeses. Heat in 400° oven or grill a few minutes to warm.
