Fruity Chicken Salad

Ingredients

1 apple, peeled, chopped
1 (15-ounce) can pineapple tidbits
1 cup seedless grapes, halved
3 cups chopped cooked chicken
lettuce
1/3 cup toasted sliced almonds

Creamy Dressing:
2 tablespoons butter
3 tablespoons sugar
1 tablespoon cornstarch
juice of 1 lemon
1/4 cup reserved pineapple juice
1/2 cup whipping cream, whipped

Directions:

Put apple in bowl; drain pineapple over apples; wait 2 minutes, then drain apples, saving juice. Add pineapple chunks, grapes, and chicken. Toss lightly with Creamy dressing. Serve on lettuce; sprinkle with almonds.

Creamy Dressing:
Heat all but whipped cream in saucepan a few minutes till smooth. Cool slightly then fold in whipped cream.
