Blue Buffalo Chicken Chili

Ingredients

1 cup chopped onion
2/3 cup sliced celery
1 cup chopped red or yellow bell pepper
1 tablespoon oil
2 cups cut deli rotisserie chicken
1 cup chicken broth
1 tablespoon chili powder
5 or 6 drops Tabasco
2 (15-ounce) cans pinto beans, drained
1 (28-ounce) can crushed tomatoes, undrained
1 (14 1/2-ounce) can diced tomatoes, undrained
1/2 cup crumbled blue cheese

Directions:

Sauté onion, celery, and bell pepper in oil 5 minutes in saucepan over medium-high heat. Stir in remaining ingredients except blue cheese. Heat to boiling, then simmer 12 minutes or more, stirring occasionally. Top servings with blue cheese.

Sub 2 2/3 cups frozen seasoning blend for onion, celery, and bell pepper to save time.
