A Dilly of a Salmon Bisque

Ingredients

1 medium onion, chopped
1 - 2 tablespoons vegetable oil
1 1/4 cups water
1/2 cup uncooked long-grain rice
1 (14 1/2-ounce) can chicken broth
6 - 8 ounces salmon fillets, cut into 1-inch pieces
2 cups fresh or frozen whole-kernel corn
1 (12-ounce) can evaporated milk
1 tablespoon Dijon-style mustard
1/2 teaspoon dried dill
salt and pepper, or Greek seasoning to taste

Directions:

Sauté onion in oil in large saucepan; cook and stir over medium heat until tender. Add water and bring to a boil; Stir in rice. Reduce heat; simmer, covered, 15 minutes. Add broth; return to a boil. Add salmon and corn. Simmer, covered, 5 minutes or till salmon flakes easily. Stir in milk, mustard, dill, and seasonings; heat through. Garnish with fresh dill sprigs, if desired.
