Just Peachy French Toast

Ingredients

1 cup brown sugar, packed
1/2 cup butter
2 tablespoons water
1 (29-ounce) can sliced peaches, drained
12 slices day-old French bread
5 eggs, beaten
1 tablespoon vanilla extract
cinnamon to taste
Garnish:
maple syrup

Directions:

The night before, combine brown sugar, butter and water in a saucepan; bring to a boil. Reduce heat to low; cook for 10 minutes, stirring frequently. Pour into a greased 13"x9" baking pan, tilting to coat bottom of pan. Arrange peaches in pan; top with bread and set aside. Whisk together eggs and vanilla; pour over bread to coat evenly. Sprinkle with cinnamon. Cover and refrigerate overnight. In the morning, let stand at room temperature for 30 minutes. Uncover and bake at 350 degrees for 25 to 30 minutes, until golden. Serve with syrup.
