FAMILY FUN MEXICAN NIGHT

For a fun family fiesta, there's so much more than nachos and tacos. Follow these sunny menu ideas to add some "ole" to everyday Or choose from the many other favorite Mexican main dishes in this cookbook----to bring extra sparkle to dinner with the tropical flavors of cilantro, chiles, lime and salsa.

Mexi Snack Mix
Mix 3 cups bit-size cheese crackers, 2 cups pretzel twists and 1 cup salted peanuts in 2 1/2-quart microwavable bowl. Drizzle with 1 tablespoon vegetable oil toss to coat. Sprinkle with 2 tablespoons taco seasoning mix (from 1 1/2-ounce envelope) toss to coat. Microwave 2 minutes longer. Spread on waxed patper cool 5 minutes before serving.

Nacho Celery
Mix 1 cup smoke-flavored cold-pack cheese spread and 1 teaspoon taco seasoning mix (from 1 1/4-ounce enveloe in small bowl. Spread mixture in four 10-inch celery stalks. Cut into 2-inch sections.

Cinnamon "Fried" Ice Cream
Crush 3 cups Cinnamon Toast Crunch cereal place in shallow pan. Quickly roll 6 scoops (1/2 cup each) canilla ice cream (1 scoop at a time) in ceral to coat. Place coated scoops of ice cream in ungreased 15x10x1-inch baking pan. Cover and freeze about 2 hours. Set oven control to broil. Uncover pan. Broil scoops with tops 6 inches from heat about 30 seconds or until coating is light brown.

Together Time

"Fry" dessert under the broiler after dinner. Earlier in the day, csoop ice cream, roll in crused crumbs and freeze for at least 2 hours so dessert's ready to go

Play up the festivity of Mexico by setting the table with multicolored bowls for chips and dip and using bright decorated paper napkins. The kids can make cut-out paper banners to drape around the kitchen.

Read a Mexican storybook about life in Mexico or in the United States for someone who comes from Mexico. Some great choices for all ages include Hair/Pelitos by Sandra Cisneros and Going Home by Eve Bunting. You might even learn some Spanish words and phrases together.

Accompany dinner with new tunes. Incestigate different styles of music, borrow CDs from the library or find tapes of Mexican songs.
