Salmon Cakes

Ingredients

1 (16-ounce) can pink salmon
1 egg, beaten
1 (5-ounce) can evaporated milk
1 small onion . minced
1/2 cup minced green bell pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
3 - 4 slices fresh bread, torn into small bits
1 cup all-purpose flour
oil to fry cakes in a 10-inch skillet

Directions:

Drain and pick over salmon, removing skin and bones. In a large bowl, mix together all ingredients except flour and oil. Shape into hamburger-size patties, about 1/2-inch thick; dip in flour and fry in oil over medium heat until lightly browned. Drain on paper towels.
