Ingredients

Fresh Brisket:
1 (4- to 5-pound) beef brisket
2 (5-ounce) bottles liquid smoke
onion, celery, and garlic salt to taste

Barbecue Sauce:
1 (46-ounce) can tomato juice
1 medium onion, grated
1 (8-ounce) can tomato sauce
2 tablespoons brown sugar
1 teaspoon dry mustard
1 (20-ounce) bottle ketchup
2 tablespoons Worcestershire sauce
2 teaspoons lemon juice
2 teaspoons chili powder

Directions:

Fresh Brisket:
Place brisket in baking dish. Pour liquid smoke over meat. Sprinkle with salts; cover and refrigerate overnight. Discard marinade. Pour Worcestershire over meat, fat side up in baking pan. Cover tightly with foil and bake 5 hours at 275°.

Barbecue Sauce:
Combine ingredients and simmer slowly until desired thickness. Uncover meat and pour half the sauce over and bake uncovered for 1 hour longer. Baste occasionally. Freeze remaining sauce. Brisket also freezes well.
