Seafood Florentine Bake

Ingredients

2 pounds fish filets, kipper snacks, or flounder, haddock, pollock, etc.
1 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon pepper
1 can condensed cream of shrimp soup or cheddar cheese soup
1 (10-ounce) package chopped spinach, thawed and well drained
2 cups Bisquick baking mix, or equivalent
1/3 cup grated Parmesan cheese
1 cup milk
2 eggs

Directions:

Heat oven to 350°F or preheat a Dutch oven. Arrange fish in greased pan or in the Dutch with a coating of oil on the bottom. Add salt, pepper, and onion powder to taste. Spoon soup over fillets and top with spinach. Beat remaining ingredients and pour over spinach. Bake for about 50 minutes. If using a regular oven, bake uncovered.
