Seafood Stew

Ingredients

1 cup onion, chopped
1 clove garlic, minced
2 cups tomatoes, chopped, fresh
2 (10 1/2-ounce) cans condensed beef consommé (preferrably low-sodium)
1/2 cup sherry, cream
4 slices lemons
3 allspice, whole
1 bay leaf
1 pound frozen fish filet or fresh, skinned
1 pound shrimp, deveined
1 (10-ounce) can clams or one dozen, chopped, undrained
1/4 cup Parmesan cheese, grated

Directions:

This is actually a very easy bouillabaisse.

1. Simmer onion, garlic, tomatoes, beef broth, sherry, lemon slices, and seasonings, uncovered, for 30 minutes.
2. Cut fillets into large chunks. Add fish, shrimp, and clams pot. Simmer 15-20 minutes or until clams open. Top with grated Parmesan cheese. Serve with salad and garlic bread.
3. Food exchanges per 1½-cup serving: 5 ½ lean MEAT, 1 VEGETABLE
