Hollandaise Sauce*


Serves: 4
Total Calories: 200

Ingredients

1/2 cup butter, melted
4 egg yolk, well beaten
2 to 2 1/2 tablespoons lemon juice
pinch white pepper
dash hot sauce
1/2 teaspoon kosher salt

Directions:

In a 8-inch Dutch oven, melt the butter and remove from heat. The butter needs to be melted but not hot. Gradually pour the butter into the beaten egg yolks, warmed over hot water (double boiler). Stir in lemon juice, salt, pepper, and hot sauce. Serve warm
