Yugoslavian Cheese Bread

Ingredients

2 cups buttermilk baking mix
1 pound Monterey Jack cheese shredded
1 1/4 cups onions chopped
5 eggs
1/2 cup buttermilk
1/2 cup butter or margarine, melted
1 (10-ounce) package spinach thawed and squeezed dry
1/4 cup cornmeal
1/4 cup cottage cheese or ricotta cheese
1 teaspoon mint leaves chopped fresh (optional)
1/4 teaspoon black pepper

Directions:

Preheat oven to 350°. Grease 13 x 9 x 2-inch baking pan.

In a large bowl, combine baking mix, Monterey Jack cheese, onion, eggs, buttermilk, butter or margarine, spinach, cornmeal, cottage or ricotta cheese, mint and pepper until blended. Spread in baking pan.

Bake for 45 minutes or until a wooden pick inserted in center comes out clean. Cut into squares. Serve hot.
