Caramel Dumplings

Ingredients

2 cups water
1 3/4 cups brown sugar packed
2 tablespoons butter or margarine
1 teaspoon vanilla extract
1 2/3 cups flour
1/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup vegetable shortening solid
3/4 cup milk
Vanilla ice cream or whipped cream

Directions:

Preheat oven to 350°. Butter a 12 x 8 x 2-inch baking dish. In a small saucepan, mix water and brown sugar. Over medium-high heat, bring to a boil. Remove from heat. Add butter or margarine and vanilla and stir until butter or margarine is melted. Pour into baking dish set aside.

Into a medium bowl, sift flour, sugar, baking powder and salt. With a pastry blender or two knives, cut in shortening until mixture resembles fine crumbs. Stir in milk and mix just until blended. Drop by teaspoonfuls onto caramel sauce, making 16 dumplings. Cover with foil and bake for 25 minutes. Uncover and bake 5 minutes longer or until dumplings are golden on the edges.

For each serving, place 2 warm dumplings on a serving plate, sauce side up. Spoon additional sauce over. Serve with ice cream or whipped cream.
