Western Omelet

Ingredients

8 slices bacon
2 tablespoons onions chopped
1/4 cup green bell pepper, diced
6 eggs slightly beaten
1/3 cup milk
1/3 cup mayonnaise
1/4 cup pimiento, diced
4 slices wheat bread
4 teaspoons butter
2 tomatoes peeled and sliced

Directions:

Fry bacon until crisp drain and crumble into medium bowl. In drippings, cook onion and green pepper until soft. Stir in eggs, milk, mayonnaise, and pimiento. Pour into greased 8x8x2-inch baking dish. Bake at 350 degrees F. for 20 to 25 minutes or until knife inserted in center comes out clean. Serve on buttered toast. Top with tomato slices.
