Turnip Fluff

Ingredients

3 turnips medium, peeled and sliced
salt
2 tablespoons butter or margarine, melted
1 egg yolk beaten
1 1/2 teaspoons lemon peels grated
3/4 teaspoon salt
1/8 teaspoon black pepper freshly ground
1/8 teaspoon basil dried basil leaves, crushed
Hot pepper sauce
1 egg white
1 tablespoon brown sugar

Directions:

In a medium saucepan over medium heat cook turnips in boiling salted water for 15 minutes or until tender. Drain and mash.

Preheat oven to 350° F. Heavily grease a 1-quart baking dish. To the turnips add butter or margarine, egg yolk, lemon rind, salt, pepper, basil and hot pepper sauce mix well.

In a small mixer bowl beat egg white until stiff. Fold into turnips. Spoon into baking dish. Sprinkle top with brown sugar. Bake for 20 to 25 minutes or until golden brown.
