Spinach Ring Medley

Ingredients

2 (10-ounce) packages spinach cooked, drained (reserve water)
3 tablespoons butter or margarine
3 tablespoons flour
Spinach water + milk to make 3/4 cup liquid
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg ground
3 eggs beaten

Directions:

Cook spinach according to package directions and drain well, reserving spinach water. Melt butter or margarine in saucepan, add flour and mix to smooth paste. Add spinach water plus milk to make 3/4 cup of liquid. Simmer sauce for a few minutes. Add seasonings and the spinach. Fold in beaten eggs and pour mixture into well buttered 1 1/2 -quart ring mold. Set in pan of hot water and bake at 375° for 1 hour or until the center is firm. Unmold and fill the center with the Creamed Onions and surround with Harvard Beets (see following recipes).
