Salmon Salad Croissants


Serves: 4

Ingredients

1 (15 1/2-ounce) can red salmon drained
1/4 cup green onion chopped, including some green
1/4 cup sharp cheddar cheese shredded
2 tablespoons mayonnaise
1 tablespoon lemon juice
1/8 teaspoon black pepper
4 croissants (if frozen, reheat according to package directions)

Directions:

Preheat broiler.

Remove bones and dark skin from salmon. In a medium bowl, mix salmon, green onions, cheese, mayonnaise, lemon juice and pepper until well blended.

Slice tops off croissants set tops aside. Spread about 1/2 cup of the salmon salad on each croissant bottom. Place on an ungreased baking sheet.

Broil 3 inches from heat source for 4 to 5 minutes or until lightly browned. Replace tops on croissants before serving.
