Ingredients

2 cups roast beef
1/2 cup onion
1 (7-ounce) can green chili
1/4 cup water

Directions:

Cut or shred roast into small pieces. Place in pan with onions, green chilies, and water. Simmer on low for 30 minutes, stir occasionally. If mixture becomes too dry add more water. Place 1/2 cup meat on tortilla and roll. Serve with salsa and cheese.
