Red Cabbage In Apple Juice

Ingredients

2 tablespoons margarine
1 onion minced
1 pound red cabbage finely shredded
1 apple large tart, pared, cored, and cubed
1 1/2 cups apple juice
1 tablespoon red wine vinegar
1 bay leaf
1 cloves whole
Salt and freshly ground pepper to taste

Directions:

Melt margarine in Dutch oven add onion and sauté until softened. Stir in cabbage, apple, apple juice, vinegar, bay leaf, and clove. Sprinkle lightly with salt and pepper. Bring to boil, cover, and reduce heat simmer for 1 hour. Remove bay leaf and clove before serving.

Note: Add 3 pounds country pork spareribs or 2 pounds link sausage layered between cabbage and cook to make a whole meal.
