New World Potato Dumplings

Ingredients

1 1/2 cups potatoes cold mashed
1/2 cup flour
1 egg yolk
1/3 cup Parmesan cheese grated
1/4 teaspoon nutmeg ground
10 cups water
2 1/2 teaspoons salt
2 tablespoons margarine melted
Freshly ground pepper to taste
1/4 cup Swiss cheese grated natural

Directions:

Place potatoes in a large lightly-floured shallow bowl. Add 1/3 cup flour, egg yolk, Parmesan cheese, and nutmeg. Work with hands, adding more of the remaining flour if necessary until dough is of kneading consistency. Form into ropes, 1 inch in diameter slice into 1-inch pieces. In a large kettle bring water to boil with 2 teaspoons salt. Add about a dozen dumplings at a time and cook over medium heat until dumplings float, about 10 to 12 minutes. Remove with a slotted spoon and drain on paper towels. Keep warm in a single layer on a greased serving dish in a heated oven. Just before serving, top with hot melted margarine sprinkle with remaining 1/2 teaspoon salt, pepper, and grated Swiss cheese.
