Pineapple Luncheon Salad

2 fresh pineapples small
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons honey
2 teaspoons mustard prepared
1 apple unpeeled Red Delicious cubed (about 1 1/2 cups)
1 cup cucumber slices, cut in half
1 avocado cubed
1/2 green bell pepper red or, cut in 1/2 -inch pieces
3 cups chicken breasts cubed cooked


Cut each pineapple in half lengthwise. Remove fruit and cut into chunks. Use 2 cups of the fruit for salad set remaining fruit aside for another use. Reserve pineapple shells.

In a small bowl, mix mayonnaise, sour cream, honey and mustard until blended and smooth set aside.

Arrange pineapple, apple, cucumber, avocado, red or green pepper and chicken evenly in pineapple shells. Pass dressing separately.
