Chicken-Pasta Salad With Pesto

Ingredients

1 (8-ounce) package corkscrew pasta
1 cup parsley lightly packed sprigs
1/4 cup Parmesan cheese grated
3 tablespoons olive oil
3 tablespoons vegetable oil
2 tablespoons walnuts chopped
1 tablespoon vermouth or water
1 clove garlic coarsely chopped
2 teaspoons basil dried basil leaves, crushed
1/2 teaspoon salt
1/8 teaspoon black pepper
2 cups chicken cubed cooked
1 (2-ounce) jar pimiento diced
1/4 cup olives sliced ripe
lettuce leaves

Directions:

Cook macaroni according to package directions. Do not overcook. Drain and cool.

Meanwhile, place parsley. Parmesan cheese, olive and vegetable oils, walnuts, vermouth or water, garlic, basil, salt and pepper in a blender container. Cover and blend until uniform. If making ahead, let stand at room temperature up to 2 hours.

Just before serving, place macaroni, chicken, pimiento and olives in a large bowl. Stir in dressing. Gently toss until well coated.

Serve in a lettuce-lined bowl at room temperature.
