Chutney Chicken Salad

Ingredients

1 cup mayonnaise
1/3 cup chutney * chopped
1 1/2 teaspoons curry powder
3/4 teaspoon onion salt
2 (6 1/2-ounce) cans chicken breasts chunk drained, or 1 1/2 cups cubed cooked chicken breasts
1 apple large unpeeled Red Delicious coarsely chopped (about 2 cups)
1 (8-ounce) can pineapple chunk well drained
1 cup celery sliced
1 banana sliced
1/2 cup raisins golden
1/2 cup coconut flaked
lettuce leaves
1/4 cup peanut coarsely chopped dry roasted or cashews
1 tablespoon green onion sliced, including some green

Directions:

In a large bowl, stir mayonnaise, chutney, curry powder and onion salt until blended. Gently stir in chicken, apple, pineapple, celery, banana, raisins and coconut until well coated.

To serve, line individual salad plates with lettuce mound salad in center. Sprinkle with nuts and green onion.

*Chutney is a thick, sweet and spicy conserve made from fruits and vegetables. It can be found in the specialty section of your supermarket.
