Pineapple Filling

Ingredients

1/2 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
1/3 cup water
1 (8-ounce) can crushed pineapple in its own juice
Crushed pineapple reserved from cake (about 1
1/4 teaspoon lemon juice
2 to 3 drops food colors yellow

Directions:

In a small saucepan, mix sugar, cornstarch and salt. Stir in water until smooth. Add undrained pineapple. Stirring over medium heat, bring to a boil and boil for 1 to 2 minutes or until thick and shiny. Remove from heat.

Stir in lemon extract and food color until well blended. Cool. Use for Royal Hawaiian Cake or as a topping for ice cream.
