Philadelphia Steak Sandwich

Ingredients

2 onions small, sliced and rings separated
1 green bell pepper large, sliced
2 to 4 tablespoons olive oil
salt
black pepper
3/4 pound beef sirloin steak boneless
4 kaiser rolls split and warmed
butter or margarine, softened
4 or 8 slices Swiss cheese

Directions:

In a heavy 3-quart saucepan over medium heat, sauté onions and green pepper in 2 tablespoons hot oil 8 to 10 minutes until crisp-tender, adding more oil if needed. Sprinkle with salt and pepper cover and set aside to keep warm.

Meanwhile, spray a large skillet with non-stick cooking spray. Trim excess fat from steak. Lightly sprinkle both sides of steak with salt and pepper. Over medium-high heat, pan-broil about 6 minutes on each side for medium-rare or to desired doneness, adding additional oil if needed. Transfer to a cutting board. Thinly slice across grain of meat keep warm.

Slice rolls in half horizontally and butter lightly. Arrange one-fourth of the meat on bottom half of each roll. Top with onion mixture, one ortwo slices of cheese, and top half of roll. Wrap in foil to melt cheese and retain heat until ready to serve. Cut in half before serving.


Serve with pickles, chips, and strawberry or banana milkshakes.
