Land and Sea Sandwiches

Ingredients

2 English muffins split
butter or margarine
4 slices bacon lean
1/4 pound shrimp small, peeled, cooked *
1 teaspoon lemon juice
4 ounces turkey, chicken luncheon meat chopped ( 3/4 cup)
1/4 cup celery chopped
1/4 cup mayonnaise
1 teaspoon Dijon style mustard
1/4 teaspoon salt (optional)
4 slices Swiss cheese natural
Paprika

Directions:

Lightly toast English muffin halves. Spread with butter. Arrange in a microwavable shallow 9-inch baking dish.

Place bacon on a paper towel-lined microwavable plate. Cover with another paper towel. Microwave at 100% power (700 watts) 3 to 3 1/2 minutes until done, rotating plate once. Cool break into bite-size pieces.

In a medium bowl, sprinkle shrimp with lemon juice. Add turkey, celery, mayonnaise, and mustard. Mix well add salt if needed. Spread one-fourth of the mixture on each English muffin half. Cover with wax paper. Microwave at 100% power 2 to 2 1/2 minutes until hot, rotating dish after 1 minute.

Sprinkle with bacon pieces. Top with Swiss cheese and sprinkle with paprika. Microwave, uncovered, 1 to 1 1/2 minutes until cheese is partially melted. Serve immediately.

*One can (4 1/2 oz.) small shrimp, drained, can be used.


Serve with assorted raw vegetables and Minted Melon Balls
