Oven Fried Chicken

1 broiler-fryer chicken (2 1/2 to 3 1/2 lb.), cut up
1/3 cup butter or margarine
1 teaspoon salt
1/4 teaspoon black pepper
1/3 cup instant potato flakes


Pat chicken pieces dry with paper towels. Melt butter or margarine in a 13 x 9 x 2-inch baking pan. Roll chicken pieces in melted butter or margarine in pan. Turn skin-side up sprinkle with salt, pepper and potato flakes. Bake, uncovered, at 375° for 1 hour or until tender. Do not turn during cooking.
